Egusi soup is a naija home staple that I've gotten *very* good at so that was a given. I did add a bit too much bitter leaf tho, but it was still good overall. This was the best batch of Red Beans and Rice I've ever made. But I'm still chasing the flavor I experienced at Cafe Beignet and [Mambos](https://www.mambosnola.com/) in NOLA. It's a bit more sweet than savory, I'm guessing they use a lot more butter and/or sugar in their recipes for the patrons! Which makes sense. I'll come back to this in a few weeks and see how I can tweak it.
